It’s on. The hunting season of 2015 is off and running. In designated areas, teal, dove and archery seasons have officially kicked off a brand new year to make new and exciting mounted memories.

Swinging that scatter gun ahead of flying teal and darting doves is a great way to knock off the rust and get back in the hunting groove. Life is good in Louisiana.

Bow hunters enjoy the advantage of sneaking in before the deer become real educated that hunters are invading the area. All we need is a bona fide cool front, and any time is a great time to be in the woods. It’s worth the trip just to have a reason to get out in Mother Nature. But don’t forget the bug juice.

It’s the change of year, and the fall season will be welcomed with open arms. After another summer scorcher, north winds have mercifully reduced the saturating humidities, making it almost bearable.

These early fronts rejuvenate the fish and fishermen alike. Fresh and saltwater fishing are making a resurgence, with fish hungry and on the prowl after surviving the summer doldrums. Catching fish heading into a north wind with pleasant temperatures — it just doesn’t get any better.

It’s an opportune time for a chance encounter with schooling fish on the feed. Predator fish surround their favorite bait and force them to the surface. It gets really exciting as aggressive fish attack in a feeding frenzy.

Sometimes, if they’re finicky, you have to experiment with baits that resemble their chosen forage fish of the day. The action can become fast and furious when conditions are right. When the schoolies are tearing it up, you can’t possibly have any more fun with all your clothes on. Throw in some cool-front weather, and you have a recipe for a great fishing trip.

Exotic animals provide hardcore hunters with a reason to get out of bed early year-round. During the off-season of traditional hunting seasons, magnificent species of a variety of animals normally indigenous to other parts of the world offer hunters another reason to roll out of bed.

Most herds have thrived to the point that they need to be harvested. Enter: Doc James McGee.

Doc keeps his hunting skills sharp hunting Texas exotics. He had laid eyes on several tremendous axis bucks and was on their trail.

He ended up harvesting a great axis that he’s displayed in a wall pedestal mount. The exposed shoulder shows off the incredible spotted cape and tall horns. These magnificent spotted deer were imported from India originally, and have prospered in the good old USA. They have especially taken a liking to the Texas hill country, and that’s just fine with Doc.

The good news is the biggest axis buck walked, leaving Doc something to shoot for. He’s never seen an axis backstrap he couldn’t cook to perfection. This is sweet meat, and he’s been known to even share with brother Danny, who earns it as gut man and chief bottle washer!
